Overnight Oats with Fresh Berries

My favorite way to start my day – with a healthy and hearty breakfast! 

This recipe is filled with wholesome, delicious goodness.   I can make it the night before and don’t need to cook the oats.  For cold winter mornings, I warm it up in the microwave for 30-60 seconds.  In the summertime, it’s a cool and refreshing way to bring on the day. 

Plus, there are endless ways to spice it up – it never gets dull!

Overnight Oats with Fresh Blueberries – makes 2 servings.

  • 1 cup uncooked rolled oats (or steel cut oats)

  • 1 cup unsweetened almond milk

  • 1 -2 tsp. Grade A 100% maple syrup

  • Cinnamon spice

  • ¼ cup fresh organic blueberries

  • 10-15 walnuts, halves or pieces

In a bowl, mix oats, almond milk, maple syrup and cinnamon until well blended.  Cover bowl and let sit overnight in the refrigerator.  In the morning, stir and top with fresh blueberries and walnuts.

If you like your oats more on the thick side, use less almond milk. 

Remember - Be creative!  Add seasonal fresh fruit, berries, brown sugar, raisins, almonds or any other healthy topper.
