Holiday Cranberry Chicken with Grapes and Tomatoes

The holidays are here – and this dish is absolutely delicious!    I recently interviewed Samantha Binkley, a certified health coach and founder of Healthy on You organic spices, who created this recipe. To watch our inspiring interview, please watch here:

 

Samantha has definitely found her calling – blending her Jamaican background and lessons learned from her mother, she has created a line of organic, gluten free and Non-GMO spices to flavor any dish.

In this recipe, Samantha recommends her “Seasoning Beneath My Wings” which is a paleo poultry rub.  I made this recipe for some friends and there wasn’t a morsel (or cranberry) left on any plate! 

Who knew that chicken could taste so good?  Or that cranberries literally “popped” upon cooking?  Or that the cooked sweetness of heirloom tomatoes and red grapes could balance the tartness of cranberries so incredibly well?

I used boneless chicken breasts rather than thighs which decreased the cooking time in the oven by about 10 minutes.  Next time, I’m going to use a combination of breasts and thighs so all chicken lovers (white and dark meat) will be satiated.  BTW – the nutcracker was my sous chef!
