Holiday Cranberry Chicken with Grapes and Tomatoes

The holidays are here – and this recipe is one of my favorites!  It was created by one of my patients, Samantha Binkley, founder of Healthy on You Organic Spices, which are gluten free, non-GMO and absolutely delicious! 

In this recipe, Samantha recommends her “Seasoning Beneath My Wings” which is a paleo poultry rub.  I recently made this recipe for some friends and there wasn’t a morsel left on any plate!  

Who knew that chicken could taste so good?  Or that cranberries literally “popped” upon cooking?  Or that the cooked sweetness of heirloom tomatoes and red grapes could balance the tartness of cranberries so incredibly well?

I used boneless chicken breasts rather than thighs which decreased the cooking time in the oven by about 10 minutes. Next time, I’m going to use a combination of breasts and thighs so all chicken lovers (white and dark meat) will be satiated.  

BTW – the nutcracker was my sous chef!
