Happy Cinco de Mayo!
Here’s one of my favorite healthy and delicious dishes to celebrate the Mexican army's victory over France at the Battle of Puebla during the Franco-Mexican War on May 5, 1862.
Did you know that one-third of a medium avocado (50 g) has only 80 calories? And contributes nearly 20 vitamins and minerals, making it a great nutrient-dense food choice? The avocado is virtually the only fruit that contains heart-healthy monounsaturated fat – that’s the good fat! Plus, avocados are naturally sodium, sugar and cholesterol free! Enjoy!

Healthy and Tasty Guacamole:

3 ripe avocados

2 Tbsp red onion
-
1 clove garlic
-
2 Tbsp chopped cilantro
-
1 Tbsp fresh lime juice

Salt to taste
To kick it up a notch, add some spicy salsa on the side!
Scoop out and mash the avocados with a fork. Save one avocado pit and place aside. Add the remaining ingredients and combine well with the mashed avocado. Lightly press the reserved avocado pit in the center of the guacamole dip. This simple trick keeps the guacamole from turning brown and allows you to store it in the refrigerator until you are ready to serve!
Vegan Street Tacos:

4 small soft corn tortillas

1 can organic black beans
-
1 cup frozen roasted corn (from Trader Joe’s)

1 cup chopped red peppers
-
1 clove garlic
-
1 tbsp chopped fresh cilantro
-
4 radishes thinly sliced
-
Cotija cheese
-
4 lime wedges
-
Salt to taste

Avocado or any high heat oil for cooking
Place a small amount of avocado oil in a pan and heat over medium heat. Warm up corn tortillas, being sure to flip over and toast both sides. Place tortillas aside
Heat about 1 tbsp avocado oil in saucepan over medium heat. Add garlic. Add red peppers, corn and beans. Sauté until bean soften a bit. Add salt to taste. Place aside.
To assemble street tacos, pile with black bean mixture, top with cilantro, cotija cheese and radish slices. Garnish with lime wedges and guacamole, get creative!

Want to kick it up a notch? Add some spicy salsa on the side and your taste buds will be in heaven.
