Cool Off With This Nourishing and Delicious Chocolate Avocado Ice Cream

Are you a little reluctant to try ice cream made with avocados? I was too. I’ve tasted quite a few desserts using avocados and found the consistency to be a little off. The savory avocado taste always seems to overwhelm the sweeter ingredients, leaving the dessert somewhat bitter. Well, this Chocolate Avocado Ice Cream breaks the mold in both consistency and flavor! 

A few simple ingredients, whipped together in your high speed blender yields a rich and creamy ice cream that is vegan, dairy-free, high in protein and rivals the real thing. The best part about this dessert is it scoops just like traditional ice cream! Not only is the texture creamy, but the taste is amazing!

I chose to use cacao powder in this recipe for its rich flavor and naturally occurring antioxidants. You can substitute cocoa powder but you won’t be getting the same chocolatey taste or phytonutrient profile. The cacao powder I like to use is from Navitas Organics. Navitas produces high-quality superfoods that are all organic, minimally processed and sustainably grown. 

There are a couple of different brands of peanut butter powder you can use. Peanut butter powder is fairly popular now and considered a ”cleaner choice,” due to its high-quality processing that doesn’t rely on synthetic fertilizers. The powder is high in protein, contains 87% less fat and 1/3 less calories than traditional peanut butter. You can find peanut butter powder at any market these days. You would think that the peanut butter flavor would overwhelm; however, the taste is very subtle. The powder simply adds plant protein and contributes to the smooth consistency of the ice cream.

PBfit All-Natural Organic Peanut Butter Powder can be found on Amazon and is an all natural, gluten-free peanut powder. PBfit peanut butter powder is made of just three ingredients – organic peanuts, organic coconut palm sugar and salt. The sugar content is 3g per 2 tablespoons. Another Peanut Butter powder is Naked PB – 100% Premium Powdered Peanut Butter from US Farms.This powder is also dairy-free and preservative-free but doesn’t contain any salt or sugar.

The blender I use is the Vitamix 5200.  However, any high speed blender will work nicely to get a thick, creamy consistency. 

The pure and simple chocolate flavor of this ice cream lends well to the addition of some fun nourishing toppings, such as mint leaves or shredded coconut. Add a little more peanut butter powder if you want a peanut butter cup dessert. Whether you choose to add a topping or not, you can feel good about indulging in a treat that is health and nourishing your body.

 

Ingredients:

2 medium ripe avocados

3/4 cup maple syrup

1/2 cup full-fat coconut milk or almond milk

1 teaspoon vanilla

1 teaspoon cinnamon

2 tablespoons NAVITAS ORGANICS cacao powder

2 tablespoons peanut butter powder

pinch of sea salt

 

Instructions: 

Place all ingredients into blender and blend on high until creamy and smooth.

Pour into loaf pan or other container and place in freezer for at least 2 hours.

Remove and let sit 10-15 minutes before serving

Top with chocolate chips, shredded coconut, chopped almonds or topping of choice
